Instructions

  1. Add lemon juice to milk and let stand 15 minutes.
  2. Combine flour, baking powder, baking soda and salt. Add butter and cut into flour with pastry blender until texture of coarse meal. Stir in dried cranberries. Stir in milk to moisten dry ingredients.
  3. Roll out on floured surface to 2″ (1 cm) thickness. Cut into 2″ (5 cm) rounds or squares. Sprinkle with granulated sugar. Bake at 425ºF (220ºC)

Cheddar and Apple Buttermilk Scones

Try these delicious scones for breakfast or as a quick treat during the day.

  • Yields: 24 servings
  • Preparation: 35 minutes

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In medium bowl, whisk together flour, baking powder, salt and baking soda.
  3. Using a grater on the largest holes, grate the chilled butter into the flour mixture and rub with fingertips until it resembles large flakes. Stir in cheese and apples.
  4. Make a well in mixture and add buttermilk. Using a fork, gently incorporate flour with buttermilk until just combined.
  5. Turn dough onto large piece of parchment paper and pat down into large disk. Use paper to fold mixture into itself 4 to 5 times. Pat dough down to a ½ ” (1 cm) thick circle.
  6. Cut out desired shapes with biscuit cutters and place on parchment paper-lined baking sheet. Brush tops with remaining buttermilk and bake for 20 minutes or until lightly browned.
  • For a quick breakfast on the run, grab a scone, slice it in half and add a slice of cheese and fresh fruit preserves – blueberry, cherry, or pear.

Café Latté Steamer

Serve this delicious beverage when you have company and you’ll have everybody wanting the recipe.

  • Yields: 2 servings
  • Preparation: 10 minutes

Ingredients

  • 1 cup (250mL) strong brewed coffee
  • 1 tbsp (15mL) granulated sugar
  • 2 cups (500mL) HEWITT’S – 2% Milk
  • ground cinnamon, for garnish

Instructions

  1. In a saucepan or large glass measuring cup, combine flavouring ingredients. Gradually whisk in milk until blended. Heat in saucepan over medium heat or microwave on medium (50%) power until steaming, 3 to 5 minutes.
  2. Using a battery-powered latté whip or whisk attachment on an immersion blender, whip hot milk mixture until frothy. Or, transfer to an upright blender or milk frothier, and blend or pump until frothy.
  3. Pour into warmed latté bowls or large mugs, and sprinkle or drizzle with suggested garnish.
  • Heat the milk just until steaming. If it boils, it may split and will not get frothy when whipped or blended.
  • Be your own barista at home by experimenting with different coffees, milk and by sprinkling cinnamon or chocolate on top.

  • Chai Latté Steamer: Replace coffee in Café Latté with strongbrewed Chai tea.

Apple Pie Cottage Cheese Pancakes

Sneak in some extra protein by using cottage cheese to prepare this pancake batter that’s also accented with freshly grated apple for added fiber and ground cinnamon for a hint of autumn goodness.

  1. In large bowl, whisk together flour, sugar, baking powder and salt. In separate bowl, whisk together milk, cottage cheese and egg; stir into flour mixture just until combined (some lumps will remain). Toss apples with cinnamon; stir into batter.
  2. Melt some of the butter in large, nonstick skillet set over medium-high heat. Pour 1/4 cup (60 mL) portions of batter into skillet. Cook, in batches, for about 3 minutes or until set around edges and small bubbles form and pop in center of pancake. Flip over; cook for about 1 minute or until golden brown on the bottom.
  3. Repeat with remaining batter, adding more butter as needed, and reduce temperature if pan begins to get too hot.
Topping:
  1. Meanwhile, using electric mixer, beat whipping cream until it holds firm peaks. Gently fold into cottage cheese along with apple butter. Serve with pancakes.
  • Hold cooked pancakes in a warm oven while cooking the remaining batter.

Apple Cheddar Pancakes with Crispy Bacon

Here’s a gourmet yet simple breakfast favourite featuring the sweet and savoury combination of apples, Cheddar and crispy bacon…which no one can resist!

  • Yields: 12 to 14 pancakes
  • Preparation: 45 minutes

Ingredients

  • 3/4 cup (175mL) STIRLING – Churn 84, melted and divided
  • 1 cup (250mL) BLACK RIVER – Maple Cheddar Cheese, shredded
  • 6 slices thick-cut bacon
  • 4 apples, peeled, cored, halved and sliced
  • 3/4 cup (175mL) maple syrup, divided
  • 2 tsp (10mL) lemon juice
  • 1/4 tsp (1mL) ground cinnamon
  • 2 cups (500mL) all purpose flour
  • 1 tbsp (15mL) granulated sugar
  • 2 tsp (10mL) baking powder
  • 1 tsp (5mL) baking soda
  • 1/4 cup (50mL) walnuts, chopped and toasted
  • 1 1/4 cups (300mL) HEWITT’S – Buttermilk
  • 2 eggs
  • 1 tbsp (15mL) dried cherries

Instructions

  1. In non-stick skillet, cook bacon over medium heat for 5 to 6 minutes or until browned and crisp. Transfer to paper towel–lined plate. Chop or crumble bacon and set aside.
  2. Wipe out skillet; heat 1/4 cup (60 mL) butter in skillet set over medium heat; cook apples and 1/4 cup (60 mL) maple syrup for 7 to 8 minutes or until tender. Stir in lemon juice and cinnamon.
  3. In large bowl, whisk together flour, sugar, baking powder and baking soda. Stir in walnuts, shredded cheese and bacon. In separate bowl, whisk together buttermilk, eggs and 1/4 cup (60 mL) of melted butter until blended; stir into flour mixture until just combined (batter will be lumpy). Transfer batter to measuring cup or pitcher with pourable spout.
  4. Heat large skillet or griddle over medium heat; brush with some of the remaining butter. For each pancake, pour 1/4 cup (60 mL) batter into skillet, leaving space between each pancake. Cook, in batches, for 1 to 2 minutes or until bubbles form on surface. Flip over; cook for 1 to 2 minutes or until golden brown, wiping pan between batches and brushing with remaining butter as needed.
  5. Hold pancakes in warm oven until ready to serve. Serve pancakes topped with sautéed apples, dried cherries and drizzle of remaining maple syrup.
  • For added bacon flavour, double the amount of bacon.

      Although pasteurization is carried out at different stages, depending on the product, it is a step in the manufacturing process of every dairy product.

    • Are Hewitt’s products gluten-free?

      Yes – all of Gay Lea’s products are gluten-free. Our production facilities are also free of gluten.

    • Are Hewitt’s products Halal?

      Many of Hewitt’s products are Halal certified. We encourage customers with these dietary restrictions to look for the respective logo which will be on all of our products that meet these regulations.

    • Are Hewitt’s s products Kosher?

      The majority of Hewitt’s products are Kosher certified. Hewitt’s Dairy and Gay Lea complies with Canadian Regulation in which all Kosher certified products are labelled with the respective ‘COR’ logo.

    • Are Hewitt’s products nut and peanut free?

      Gay Lea’s products are all nut and peanut free, with the exception of product made at Hewitt’s Dairy Bar. Hewitt’s Dairy Bar produces ice cream made with both nuts and peanuts.

    • Can I freeze Hewitt’s products in the containers that you ship them in?

      We do not recommend freezing any of our products with the exception of butter.

    • Does Hewitt’s Milk contain any artificial growth hormones, antibiotics or preservatives?

      Hewitt’s and Gay Lea Milk does not contain preservatives. In Canada, the use of artificial growth hormones is prohibited for dairy cows and antibiotic use must comply with Canadian law. Milk supply safety and quality regulations are very strict and include provisions for farm and dairy processing plant inspections and testing.

    • What is the source of the Goat Milk?

      We purchase Goat milk from over 110 goat milk producers in Ontario. They are supplied with proper bedding, heat, light and a nutritious balanced diet. Goats diet consists of a mixture of hay and haylage, corn silage and a dairy ration which is composed of grains such as soybeans, barley and minerals. Most dairy farmers grow their own feed and as a result may contain GMO feed. Our Organic Goat Milk comes from 4 different farms in Ontario. The goats are fed the same diet, but the feed is GMO free.

    • Why is my milk not Steaming?

      It is possible that if steaming is done at too high or inconsistent a temperature it could lead to curdling.  This is a result of the protein denaturation which then tend to clump and result in a curdling effect.

    • Why is my milk not frothing?

      Based on our experience, any changes in the milk (i.e. souring or stale flavours) would have an impact on the ability of the milk to form froth bubbles or alternatively, may disrupt the stability of the froth.
